Roasted Whole Chicken Recipe

Roasting a whole chicken is the quickest way to meal prep. I love to make a couple at a time to debone and eat the meat for the week. Then, I can use the bones to make chicken bone broth! This is a basic recipe and you can alter it to your liking. Use the meat for a variety of meals such as chicken salad, eat as a main dish with sides, chicken pot pies, shred the chicken to make wraps. The possibilities are endless!
On this day, I made 4 at once, and I used this basic recipe for all of them. We will eat on these over the next week or two and I don’t have to worry about cooking each night. Lunches will also be prepped with this meat for grab and go meals for my husband to take to work.
I will be posting my bone broth recipe soon, so check back for that one. It’s also a simple recipe and you can use the broth for soups, stews, or to drink daily for your gut health.
Roasted Whole Chicken
To get started, preheat your oven to 425 degrees Fahrenheit. While your oven preheats, gather your ingredients and prep your chicken. Remove the giblets from your chicken (yes, these are generally still included when you purchase a whole chicken). If the neck is also still attached to yours, remove that as well. Wash and pat your chicken dry.
Mix your ingredients together. You can use any herbs you wish, and I sometimes mix it up. This basic recipe includes olive oil, garlic, thyme, salt, and pepper. Once combined, rub all over your chicken. Lift the skin off the breast and rub in between that as well for added flavor.
Place your chicken in the oven at 425 degrees for 20-25 minutes. Flip your chicken over and cook an additional 20-25 minutes. You will know your chicken is done when the juices run clear and the internal temperature is 165 degrees.
Allow your chicken to cool prior to deboning if you are planning to do so.
You can add different herbs and lemon to change things up in your recipe if you wish.

Ingredients
- 1 Whole Chicken
- 1 tbsp olive oil
- 1 clove minced garlic
- 1/2 tsp chopped thyme
- 1/4 tsp kosher salt
- black pepper to taste
Instructions

Preheat oven to 425

Remove giblets, rinse and pat chicken dry.

Mix ingredients in small bowl

Rub mixture all over chicken and under chicken skin

Put in oven for 20-25 minutes

Flip chicken halfway through and cook an additional 20-25 minutes

Check for doneness by checking internal temp to be 165 degrees. Juices should run clear also.
